Spinach, Broccoli and Cheddar Quiche with Hash Brown Crust

I L-O-V-E cooking since I was a little kid, I liked to help my maid serving dinner (since my mom rarely cooks). She is a great cook, I learned a lot from her, but mostly Indonesian Balinese food. My love for western food began to start when my father took me to western comfy food restaurants. It tasted heavenly but wasn't cheap at all, so I started to think "Why can't I make it at home?" Then I started to practice and fell in love with being in the kitchen. I'm not an expert for sure, I like making comfy food that is not hard to make but looking pretty impressive for the family to enjoy. Like this easy Quiche!

Let's start from the crust.

1. First, grab yourself a glass pie plate or spring form pan, whatever you have at home. Grease the entire surface with butter. I use unsalted butter. Set aside.

2. For the hash brown, I make it from scratch by peeling the potatoes and grate them. Make sure to squeeze out any moisture to make the crust crispy. Then place them in the plate nice and tight to the sides.

I use hash brown potatoes for the crust because It is crunchier and more tasteful than just bland pie crust. You can use frozen hash browns as well.


3. Put it in the preheated oven at 170 C/350 F for about 25 minutes or until they look crispy enough.

4. While waiting, grab yourself a saute pan and saute the onions and garlic until onions are fragrant and soft. Add the prepared spinach and broccoli (If you want softer broccoli, you can boil first until half-cooked). Cook until they are all soft and put it aside to cool down.

For veggies, you can put your favorites as you like, like peppers and other wilted veggies.

5. Grab a large mixing bowl and add the eggs, bacon or ham, cheddar cheese, milk, salt pepper, pinch of grated nutmeg, and of course the cooled veggies. Mix it all together and pour into the hash brown crust.

6. Bake it in a preheated oven at 170 C/350 F for 50 min or until it is cooked thoroughly.

Be careful not to burn the hash brown


7. Tarraaaaaaaaaaaaaaa! The QUICHE is done!

Ingredients

Hash Brown Crust:
3 medium potatoes, grated and squeezed dry
1 tbsp butter
A pinch of garlic powder, oregano or Italian seasonings, salt & pepper

Quiche:
Onion, diced
2 cloves garlic, minced
1 pckg Spinach
1 bunch small broccoli
4 slices ham or bacon
250 ml milk
7 eggs
40 gr cheddar cheese, grated
A pinch of fresh grated nutmeg

Instructions
Hash Brown Crust:
1. Add butter or olive oil to the glass pie plate and grease the entire surface including the sides. Set aside
2. Place and push the potatoes on the plate including the sides
3. Bake in the preheated oven at 170 C/ 350 F for 25 minutes or until the hash brown is crispy enough

Quiche:
4. In a saute pan, add some oil and cook the onions, garlic until the onions are fragrant and soft. Add the spinach and broccoli. Cook until they are all soft and put it aside to cool down
5. In a mixing bowl, combine the eggs, bacon or ham, cheddar, milk, salt pepper, nutmeg, and the cooled veggies. Mix it all together and pour into the hash brown crust
6. Bake in the oven at 170 C/350 F for 50 min or until it is cooked thoroughly
